Milk 1 liter
Rice 200 grams (soaked for ½ an hour before cooking)
Sugar to taste
Cashew nut a few (finely chopped)
Cardamom 4 to 5 pieces (peeled off seeds only)
Raisin a few (soaked few minutes before adding)
a. Pour rice in water for 20-30 minutes.
b. Put the milk on a pan and let it boil for a few minutes, keeping the flame at low.Stir continuously when the milk becomes a little thick.
c. Put the rice in it and, stirring at intervals, let it boil for a while.
d. When the rice is cooked, garnish it with the chopped cashew nuts, cardamoms and the raisins into it
e. Add sugar when the kheer is cool at room temperature.
f. Serve it cold or hot.
Note: Don't add Sugar when the kheer is hot, it might leave water so Add sugar only when kheer is ready & full cold till room temperature. Then put it in Refrigerator or if you want to serve hot, then put a bit in Microwave. If you heat up at cooking range, it might spoil the real taste of Kheer.
