Ingredients for GATTA:
Besan - 3-4 Large TSP
Salt to taste
Chilli Powder - 1 TSP
Aestofedia - 1 pinch
fennel Seeds - 1/2 TSP
Onion - 1 Medium size chopped finely.
Ginger/Garlic (Fresh chopped finely) - 1 TSP
Oil - 1 TSP
Baking Soda - 1 pinch
Green cillies - 2 chopped finely

Ingredients for Gravy
Curd (Thick but without lumps) - 5-6 Large TSP
Chilli Powder 1 TSP
Turmeric Powder - 1/2 TSP
Coriander Powder - 2 TSP
Aestofedia - 2 pinch
Cumin(Jeera) seeds
2-3 Green Chillies chopped
Ginger/Garlic  - 1 TSP
Garan Masala - 1 TSP
Oil - 2 Large TSP
Coriander Leaves for garnishing.

Method for preparing Gatte :

1)Mix together all the ingredients for gatte and make a firm 
dough.(For better results beat the dough for 10-15 minutes).
2)Once the dough is ready roll it in 5-6 cylindrical strips.
3)Put these strips in boiling water for 10-15 min (Until its 
soft, you can test this by putting in a knife).

4)Take out the strips and cut it into small round pieces.These 
pieces are called gatta.

5) Fry these gattas in oil for 2-3 min.

Method for Gravy :

1)Heat oil.
2)Put aestofedia,Cumin seeds, chopped green chillies, ginger 
garlic paste and stir for 1 min.
3)Add turmeric powder, chilli powder, salt, coriander powder 
and 2 large TSP water, cook this masala until it leaves oil.
4)Once the masala is cooked add curd and stir it continuously 
until is comes to boil (This is very important).
5)Once it starts boiling reduce the flame add the fried gattas 
and 
1/2 cup of water and cook it for 10-15 min.
6)Add Garam Masala and coriander leaves, cook for 1 min.

Rajasthani gatta is ready to eat with Naan/Chappati/Rice.
